The Butchery was born out of a belief that by providing the highest quality meat, excellent customer service, competitive pricing and consistency in our products, we would have steady, satisfied customers. We’ve been serving our local community with pride since 1980.

I come from a long line of butchers and purveyors of fine meats. My grandfather and great-grandfather were both butchers who ran and operated their own meat shops. In 1948, my grandfather opened Central Meat Market in the ByWard Market. My father, Danny, ran a wholesale meat business in Ottawa for years, but always wanted to open his own butcher shop. His dream came true in 1980 when he sold his prized candy apple red Thunderbird and opened The Butchery, with his partner Jack Beaudin.

I started working at The Butchery at the age of fourteen, and never stopped. I fell in love with cutting meat, and even more in love with serving customers. To me, my job isn’t a job - it’s what I love to do.

You know the saying it’s a small world?
Well, in our case, it really is. Fred has a long history of not only working in the meat business, but working with my family as well. At the age of 13, Fred got his first part-time job working for my grandfather and uncle at Central Meat Market.

We have been so lucky to have Fred as our Manager since 2006. He is a skilled meat cutter and has been invaluable in all areas of the store. His focus is providing the highest quality products and service to our customers. He adores them and says he knows they can’t get better meat anywhere else.

Fred is my right and left hand man. Together we make the ultimate team - like burgers and fries, or steak and potatoes. And if we're not at the store, you can usually find us on the golf course - together.
